    I'll be doing the same tomorrow. Roast chicken for dinner tonight, which gives me two chickens worth of bones, so stock making time.

    If it helps, I freeze the stock in ice cube trays, then drop the stock cubes into a big ziploc in the freezer. Gives me homemade stock whenever I need it, and able to portion out the amount I want.

    I typically freeze stock in the rectangular plastic tubs lunch meat comes in - then stick those cubes in ziploc. ice trays are too fussy (plus I don't have any - but the lunchmeat tubs I have ;-) Hubs saved a ton and made ice with them to cool his mash quickly when he brews.....

    We typically plan four or five dinners for the week ahead while caffeining up on Sunday morning. The theme this week was Freezer Games.

    Last night: Spicy green bean and turkey stir-fry with basmati. (Ground turkey)
    Tonight: The chile verde I made yesterday. (Pork shoulder)
    Tuesday: Meatballs and marinara. (Both)
    Wednesday: Ramen with ono chicken thighs. (Ramen base/stock)
    Thursday: Chili and cornbread. (Chili)

    Awesome. I save the bones and skin in the freezer when I I prep chicken then when I have enough I make stock the same way. You can tell the good stuff because it's like jelly when you chill it down. You can't buy that !

    Tonight's dinner was a fabulous risotto and some roast chicken.

    Chicken was from the store but I had a free coupon (hey man, those chickens are like 8 bucks!), so I bought it yesterday and threw it in the fridge. Roasted it in the oven tonight at 350, threw on some lemon juice and pepper, took each of the legs n thighs to freeze, used breast meat tonight and throughout the week. Yaaay.

    I used HelloFresh for a while. Going back to it. My husband said he would take over the cooking a couple of months ago. He did but It didn't last long. I'm hoping this will hone his skills. Plus I find we waste a lot of food with just the two of us. Too many leftovers that we never eat.

    Good call! I used to really like the mealkit Plated, but unfortunately they stopped doing mealkits last year :( They had some fun options out there!

    I flip between HelloFresh and the Martha Stewart one, but HF has been constantly good. Some of these other kits, their food just doesn't look as appetizing, or it's too "out there" for me.

    Sunday night - made italian wedding soup, doubled the meatballs (turkey & pork this time) to keep extra in the freezer. Greens were chard from the garden (longest lasting chard - started in the spring, survived summer heat, thriving again in the cool fall!) It was the best wedding soup I've made - I think it was smoked turkey stock but sadly I hadn't labeled the stock container in the freezer (I'm better than I used to be but not at 100% on labeling....) Monday night - spicy miso pasta. Tonight - hopefully grilled sausage with spaetzle but I have to go dig in the freezer and see what sausage options we have at the moment....

    I take perverse pride in not wasting food. Around here, we eat "whatever it is" made from leftovers at least once a week. One of the reasons I got the garam masala (from a previous post) is that spicing is a way to goose up leftovers. Works best if your original meal is relatively simple. Mag is a good sport about eating leftovers. Of course, my attitude of "take it or leave it" may be a factor.

    We're retired, so time is much less of a factor, and I enjoy both cooking and grocery shopping. I shop super early nowadays to avoid crowds.
